Ingredients (Partial Mash2.8 gal)

  • 1 lbs American 6-row Pale

    American 6-row Pale

    Tends to increase lautering efficiency due to a stiffer husk. May be used as the base malt for any beer style. The enzymes in all varieties of the current crop are sufficient to support high percentages of specialty malts and adjuncts.

  • .5 lbs Rye Malt

    Rye Malt

    Often used in German Ales and specialty beers

  • 2 lbs American Munich

    American Munich

    Munich Dunkels. Adds color/nutty flavor. Sometimes called Aromatic.

  • .25 lbs American Chocolate Malt

    American Chocolate Malt

    Use in all types to adjust color and add nutty, toasted flavor. Chocolate flavor.

  • 2.625 lbs Dry Amber; Muntons

    Dry Amber; Muntons

    Used predominantly in the production of medium-colored beers such as pale ales, IPAs, and bitters.

  • .5 oz Northern Brewer - 6.7 AA% whole; boiled 60 min

    Northern Brewer

    Used for bittering with strong flavors and very fragrant in steam beers, dark English ales, and German lagers. Aroma is medium-strong with evergreen and mint overtones.

  • .25 oz Czech Saaz - 3.5 AA% whole; boiled 15 min

    Very mild. 'Noble'.

  • 1 tsp Irish Moss - (omitted from calculations)

    Wyeast 2112 California Lager™

    Particularly suited for producing 19th century-style West Coast beers. Retains lager characteristics at temperatures up to 65F, and produces malty, brilliantly-clear beers.

Notes

Inspired by Utenos Porteris, this variation includes a touch of rye malt and two American twists: 6-row malt and California lager yeast. Partial mash is done in the oven for 90 minutes at 152F. Pitch a 48-oz starter.
