I split this batch. One 'clean' with French Saison, one with Farmhouse blend, Brett C and Fantome dregs. Both are similar but have quite different qualities. There is a lovely caramel flavour to both that is more in the nse than taste. No real roasty flavours, but a good, dry saison. The clean portion has some good restrained belgian funky (but not wild) flavours. The bretted version has a distinct wild aroma and flavour that integrates well with the base beer. I don't really know which I prefer, one day one, one the other. It's a brew I'd make again and would experiment with the grain bill absent the dark malts for a paler saison.
