Alpine Spring Clone

Brewed on Monday, everything went very well, started at 1.060 had(for me) very good efficiency....by Saturday when I racked to secondary it was already down to 1.014 so it is nearly done. Made a nice starter and used an O2 stone for the first time with pure oxygen. Washed the yeast left in the primary so now I have 4 jars with an inch and a half of yeast in them for the next lager I make.

Too Impatient

Had an awesome brew day, hit all my targets, had a nice starter made and fermentation started pretty quickly. It fermented out in about 8 days. I only let it sit for 1 week before I hooked it up to the CO2. After 10-14 days it didnt seem like it wanted to carbonate, but now after 3 weeks it is pretty good. I should have had more patience and actually lagered it for a month or so for it to mature. It is starting to taste better and I know as I get to the bottom of the keg it will be even better
