A free-flowing white powder, mixed into solution in a simple mixer, and normally added as beer is transferred from fermenter to storage. This yeast is one of the most widely used lager yeasts in the world. Very malty and clean, great for all German lagers, pilsner, oktoberfest, and marzen.
Notes
12/19/2011: 1.8 L yeast starter from washed 200 ml slurry taken from Mia bock primary cake. Used deionized water for washing. Brewed 12/20/2011 Adjust water to malty taste profile (Cl/S ~ 1.3): Denver (Foothills) water added 1/8 teaspoon Epson Salter, 1 Tsp Chalk and 1/2 Kosher salter to 5 gallon mash water. Protein rest at 133 for 15 minutes. 2 gal decoction, rest at 155 for 15 minutes. Bring to a boil, then simmer for 15 minutes. 60 minute Sacc. rest at 151-153Add the dark grains at 45 minutes of the rest. SP 1.058 Aerated for 30 minutes, pitched at 65. Blended starter with wort prior to pitching. (Fermentation active 12 hours after pitching). Pitched the full starter. Ferm at 50, lager 4 weeks min at 33-35. 12/29: Fermenation still active
