Ingredients (Extract5 gal)

  • 1 lbs Crystal Malt 40°L

    Crystal Malt 40°L

    Sweet, mild caramel flavor and a golden color. Use in light lagers and light ales.

  • .5 lbs White Wheat Malt

    White Wheat Malt

    Weizens. Improves head retention in all beers. Contributes spicy flavor. Protein rest required.

  • .5 lbs American 2-row

    American 2-row

    Yields a slightly higher extract than Six Rox brewers Malt. Tends to give a smoother, less grainy flavored beer. Some brewers claim they can detect a significant difference in flavor. Lower protein and will yield a lower color than Six-Row Brewers Malt

  • 8 lbs Dry Extra Light; Muntons

    Dry Extra Light; Muntons

    Contains no colored malts or unmalted products; the light color of this product is achieved by using low processing temperatures and low-colored raw materials.

  • 2 lbs Honey

    Honey

    Imparts sweet and dry taste. For honey and brown ales. Also: specialty ales.

  • 1 oz Cluster - 7.0 AA% pellets; boiled 60 min

    Cluster

    Used for bittering and flavor qualities in light and dark American lagers. Aroma is very floral.

  • 1 oz Cascade - 5.5 AA% pellets; boiled 5 min

    Spicy with citrus notes. Slightly grapefruity.

  • 6 oz Ginger (fresh) - quarter inch dice or puree (omitted from calculations)

Notes

Add the ginger 10 minutes before flameout. Additional ginger can be added to the secondary to increase the ginger aroma.

Yeesh! What have I done?

The first taste of this one (before bottling) was bitter in the extreme, probably too much ginger or ginger too long in the secondary. Tried correcting by adding some malto-dextrine and about 1/2 pound of honey to the priming sugar mix. The finished product was much sweeter and heavier than expected but comments received when we rolled it out were mostly positive. We'll brew this one again after a few tweaks.
