Ingredients (Extract5 gal)

  • 1.0 lbs Crystal Malt; Beeston

    Distinctive coffee flavor

  • 0.125 lbs Roast Barley; Crisp

    Roast Barley; Crisp

    Sweet, grainy, coffee flavor and a red to deep brown color. For porters and stouts.

  • 3.0 lbs Dry Light Extract

    Dry Light Extract

    White color, mild flavor. Will produce lagers and Pilseners and can also be used to produce darker beers when used in conjunction with colored malts. Made of pale malt.

  • 2.0 lbs Dry Extra Light Extract

    Dry Extra Light Extract

    For making very pale ales and lagers.

  • 0.5 lbs Light Brown Sugar

    Light Brown Sugar

    Imparts rich, sweet flavor. Use in Scottish ales, old ales and holiday beers.

  • 0.25 lbs Molasses

    Molasses

    Imparts strong sweet flavor. Use in stouts and porters.

  • 2.0 oz Fuggle - 4.8 AA% pellets; boiled 60 min

    Mild. Mainly used for finishing and dry hopping especially pale ales, porters, and stouts. Aroma is mild and pleasant, spicy, and soft.

  • 0.50 oz Goldings - 5.0 AA% pellets; boiled 15 min

  • 1.0 tsp Irish Moss - (omitted from calculations)

    Irish Moss

    A dried red-brown marine algae. Fining agent to remove large proteins. Negatively charged polymer attracts positively charged protein-tannin complexes (extracted from grain husks and hops) during the boil. This action is aided by the clumping of proteins in the boiling process. Irish moss settles to the bottom of the brew kettle with spent hops and hot break material at the end of the boil.

    From Whitbread. Ferments dry and crisp, slightly tart, fruity and well-balanced. Ferments well down to 65F.

Excellent English Pale Ale (Similar to Bass Ale)

This English Pale Ale turned out excellent. Very comparable to Bass Ale. The molasses and brown sugar give it a little something extra. Mild for a pale ale, not too hoppy or bitter. Fermented for two weeks, then aged in bottles 5-6 weeks. Sediment was low, but next time I will condition in secondary for a couple weeks. I plan to brew this again in a double batch and keg next time.
