Citra™ is a special aroma hop variety developed by the Hop Breeding Company (a joint venture between John I. Haas, Inc. and Select Botanicals Group, LLC). It was released in 2007. Citra™ has fairly high alpha acids and total oil contents with a low percentage of cohumulone content. The variety imparts interesting citrus and tropical fruit characters to beer.

Abbey-style top-fermenting yeast, suitable for high-gravity beers. Estery.
Notes
Steep honey malt grain at 155 degrees for 30 minutes. Add LME and sugar candy and bring to boil. Add honey after boil for 10 minutes to steep before bringing wort temperature down. Noted slow fermentation, move to 2nd fermenter after 1week. total fermentation 2 weeks. bottling and keep for 2 weeks. Very aromatic, beautiful flowery aroma with honey aroma, start sweet and finishes dry in your mouth, full body, excellent head retention. Strong alcohol punch. Mellows out if you keep in bottle more than 2 weeks.

Full flavor thick Belgian beer

This is by far one of my best recipes. It is the one requested all the times from my friends when they come to my home. I have modified the recipe through 2 new iterations and the final product could be an award winner. Will publish latest recipe as separate entry.
