  • 0.5 lbs English Chocolate Malt

    Pronounced caramel flavor and a red color. For stouts, porters and black beers.

Aiming for a malty, smooth porter with good aroma. Chose Carafa II Special to get the smooth texture. Use a teaspoon of calcium carbonate in the steep (152F for 40 minutes) to cut back on the acid of the dark grains.

Into the bucket...

Pitched the 002 into a frothy 5-gallon bucket of creamy and dreamy brunette curls at 71F with an OG of 1.49...The house smells wonderful.

Great flavors but one mistake

The flavor profile is quite good with this, and the mouthfeel is exceptional. However, there is too much tannin -- I recall sparging with water that was near boiling when I should have brought it down to no-hotter-than 170F. I got too much husk tannin in the end result. It's not all bad - the tannin gives a snappy clean aftertaste. But I wanted more of a malt finish.
