Notes

The goals are to add some malt balance,eliminate the undesirable grass and resin in the finish, while keeping the over the top punch of the Simcoe citrus and pine flavor. The bittering hops will be 50% of the more neutral Horizon variety; Then 1.5 oz of Simcoe is spread over the last 20 minutes for flavor and aroma. There will be dry hopping with a citrusy, low oil variety such as Ahatnum or the Moteuka variety from New Zealand. The Caramalt 33 will be Hugh Bairds Carastan.
