Belgian Golden Strong Ale • Extract • 5 gal

Belgian style IPA using a grain bill similar to the Flying Dog "Raging Bitch". Smells of carmel and citrus, a great beer for steak and pork. VERY aggressive fermentation days 2-3, recomend a blow off valve.

  • 4 lbs Crystal Malt 60°L

    Crystal Malt 60°L

    Sweet caramel flavor, deep golden to red color. For dark amber and brown ales.

  • 8 lbs CBW® Golden Light Liquid (Malt Extract); Briess

  • 1 lbs Candi Sugar Amber

    Candi Sugar Amber

    Smooth taste, good head retention, sweet aroma and high gravity without being apparent. Use in Belgian and holiday ales. Use clear for tripels, amber for dubbels, and dark is used in brown beer and strong golden ales.

  • 1 lbs Corn Sugar

    Corn Sugar

    Use in priming beer or in extract recipes where flaked maize would be used in a mash.

  • 1 oz Warrior® - 16.0 AA% pellets; boiled 30 min

    Warrior®

    New hop with much potential. Very stable.

  • 0.5 oz Columbus - 15.0 AA% pellets; boiled 15 min

    Columbus

    Used mainly for bittering with some flavor qualities as well. Aroma is pleasant.

  • 0.5 oz Amarillo® - 8.5 AA% pellets; boiled 3 min

    Amarillo®

    Grown in Washington. A newer multi-use hop with a nice citrus-flower bouquet and medium-high acid content suited for bittering. Used in American Ales and IPAs.

  • 1 tbsp Irish Moss - 15 Minutes out (omitted from calculations)

    Irish Moss

    A dried red-brown marine algae. Fining agent to remove large proteins. Negatively charged polymer attracts positively charged protein-tannin complexes (extracted from grain husks and hops) during the boil. This action is aided by the clumping of proteins in the boiling process. Irish moss settles to the bottom of the brew kettle with spent hops and hot break material at the end of the boil.

  • Wyeast 3787 Trappist High Gravity™

    Wyeast 3787 Trappist High Gravity™

    Robust top cropping yeast with phenolic character. Alcohol tolerance to 12%. Ideal for Biere de Garde. Ferments dry with rich ester profile and malty palate.

Notes

Activated smack pack 8 hrs prior. OG was 1.094, pitched at 78F. VERY aggressive fermentation on second day, blow off valve on your fermenter is recomended! Fermented 14 days @ 68F(1.018), racked over to secondary fermenter and dry hopped with 1/2 oz. Amarillo for another 6 days @ 74F(1.012). Tasted great at bottling, going to allow this one to mature for 4 weeks before final review. Initial tasting was great... can't wait! ***UPDATE - Just cracked one open, could use additional carmel flavor but overall, a great Belgian IPA. A personal note... dry hop with a full oz of amarillo next batch.
