August's Summer Cream Ale
Cream Ale • Extract • 5.0 gal
Brewing 1/21/2011. Using all DME to obtain lighter color vs. using LME. Also, late addition of DME. Using Cascade and Tann hops due to what I already have in supplies. Doing a 90-min boil. ABV% a bot high but I am willing to live with it.

Our most popular yeast strain is WLP001, California Ale Yeast. This blend celebrates the strengths of California- clean, neutral fermentation, versatile usage, and adds two other strains that belong to the same 'clean/neutral' flavor category. The additional strains create complexity to the finished beer. This blend tastes more lager like than WLP001. Hop flavors and bitterness are accentuated, but not to the extreme of California. Slight sulfur will be produced during fermentation.

Brewed this today, 3-14-2011. Steeped grains on stove for 30min at 155. Sparged for 15min at 165. Boiled Tettnanger for 45min. Added DME at this point. boiled 10 min. Added .3oz casacade. Added whirlflock tab 15 min prior to end of boil. After DME, color looked great...nice and light. Boiling of DME darked a bit and additional Cascade Hops darked as well. OG unknown as hydrometer fell and broke!! Pitched yeast. We shall see. Plan: 1 week in primary. 2 weeks in secondary. Then bottling.

Finally racked to secondary for 2 weeks decided to keg vs bottle. Brew very nice and crisp. Light head and color. Very nice beer for cool down after long day. Will brew again.
