Irish Moss
A dried red-brown marine algae. Fining agent to remove large proteins. Negatively charged polymer attracts positively charged protein-tannin complexes (extracted from grain husks and hops) during the boil. This action is aided by the clumping of proteins in the boiling process. Irish moss settles to the bottom of the brew kettle with spent hops and hot break material at the end of the boil.

Notes

This beer turned out fantastic. Nice dry taste with hints of malt sweetness. Carbonation almost champagnesque. Very easy drinking for a high abv beer. Lighter than calculations show.
Brewed Last Weekend

I'm not a big fan of the Belgians, but my buddy is, and we brewed this last weekend (7/7/2012). The hydrometer sample tasted nice. We'll see what the final product turns out.
Bottling Notes

Bottled this brew this afternoon, after 3 weeks in the fermenter. Nice dark color, nice black cherry aroma and first flavor. Good smooth after taste. Hydrometer readings indicate 11.66% ABV; however, hop debris in initial hydrometer sample probably overstated OG of 1.110. Looking forward to when it's fully bottle conditioned and ready to drink.
