Ingredients (Extract5 gal)

  • .18 lbs 2-Row Caramel Malt 40L; Briess

    2-Row Caramel Malt 40L; Briess

Sweet, Caramel, Toffee. S Characteristics & Applications: • In contrast to Brewers Malt, glassiness is a distinguishing characteristic of Caramel Malt. The glassy endosperm creates the desirable non-fermentable components giving true Caramel Malt the ability to contribute body (mouthfeel), foam foam retention, and extended beer stability, while contributing color and unique caramel flavor. • 2-Row Caramel Malt 40L is a roasted caramel malt that imparts golden to light red color. • Use 3-7% for Pilsener-style beers for balance. • Use 5-15% to provide color, sweetness and color to light amber beers. • Produced from AMBA/BMBRI recommended 2-Row Malting Barley varieties.

  • 6 lbs Dry Amber; Muntons

    Dry Amber; Muntons

Used predominantly in the production of medium-colored beers such as pale ales, IPAs, and bitters.

  • 2 lbs Dry Extra Light; Muntons

    Dry Extra Light; Muntons

Contains no colored malts or unmalted products; the light color of this product is achieved by using low processing temperatures and low-colored raw materials.

  • 1 oz Perle - 4.5 AA% whole; boiled 1 min

    Perle

Used mainly for its minty bittering and good green hop aromas in all non-pilsener lagersand wheats. Aroma is pleasant and slightly spicy

  • 1 oz Amarillo® - 9.2 AA% whole; boiled 60 min

    Amarillo®

Grown in Washington. A newer multi-use hop with a nice citrus-flower bouquet and medium-high acid content suited for bittering. Used in American Ales and IPAs.

  • 1 oz Cascade - 6.1 AA% whole; boiled 15 min

    Cascade

Spicy with citrus notes. Slightly grapefruity.

  • Wyeast 2206 Bavarian Lager

    Wyeast 2206 Bavarian Lager

Used by many German breweries to produce rich, full-bodied, malty beers. Good choice for Bocks and Dopplebocks.

some of the numbers have changed based on actual AA content of hops and malt extract changes.

Current G 1.040... Maibock yeast fermenting a little slower than other types I have used. still a far cry from the 1.014 listed in calc. taste test reveals a strong malt profile with some esters apparent. Hop presence limited, could be due to yeast used. will probably bottle on 4/30 if gravity drops an acceptable amount.
