Ingredients (Extract5 gal)

  • .5 lbs American Caramel 60°L

  • .75 lbs American Black Patent

    Provides color and sharp flavor in stouts and porters.

  • .25 lbs Roasted Barley

    Roasted Barley

    Sweet, grainy, coffee flavor and a red to deep brown color. For porters and stouts.

  • 12.5 lbs Dark Liquid; Alexanders

    Dark Liquid; Alexanders

    Colored using roasted malt to give a rich mocha flavor and aroma bringing individuality to mild, porter, and stout brews.

  • 1 lbs Honey

    Honey

    Imparts sweet and dry taste. For honey and brown ales. Also: specialty ales.

  • 2 lbs Dark Brown Sugar

    Dark Brown Sugar

    Imparts rich, sweet flavor. Use in Scottish ales, old ales and holiday beers.

  • 1 oz Galena - 13.0 AA% pellets; boiled 60 min

After the 60 minute boil, I pulled the hops and boiled the beer for another 45 minutes to caramelize the sugar a bit more.

I put this one into the secondary after two weeks and it has a developed a dark krausen- again. When I was siphoning this one to the secondary my tube got clogged with chocolate bits. It smelled great though. I should be bottling this one in about a month so it can sit for 8 and get ready.

Opinions please

I have been thinking about this recipe and how I hope it will turn out. What I have started to wonder is should I add some vanilla and/or molasses to this beer in a tertiary fermenter? Another topic I would like someone to help me with on this is- should I pitch more yeast to make sure the fermentation is done? The reason I ask is because another beer I am making(with a higher ABV) says to do this, can anyone comment with suggestions or results?
