  • .180 kg Caramel Rye Malt; Weyermann®

    Caramel Rye Malt; Weyermann®

    German-grown top-quality rye (2004 harvest). Product Characteristics: Carefully caramelized brown kernels lend a slightly aromatic, biscuit-like, smooth rye component and dark-brown color to finished beer. Recommended Quantities: Up to 15% of total grain bill Suitability (beer styles): All specialty multi-grain ales and lagers.

  • .120 kg British Crystal 55°L

    British Crystal 55°L

    Sweet caramel flavor, adds mouthfeel and head retention. For pale or amber ales.

  • 3 kg Liquid Amber Extract

    Liquid Amber Extract

    Amber is used predominantly in the production of medium-colored beers such as pale ales, IPAs, and bitters.

  • 27 g Northern Brewer - 8.0 AA% pellets; boiled 90 min

    Northern Brewer

    Used for bittering with strong flavors and very fragrant in steam beers, dark English ales, and German lagers. Aroma is medium-strong with evergreen and mint overtones.

  • 10 g East Kent Goldings - 5.0 AA% pellets; boiled 10 min

    East Kent Goldings

    Mild, slightly flowery.

  • 7 g East Kent Goldings - 5.0 AA% pellets; boiled 5 min

    East Kent Goldings

    Mild, slightly flowery.

  • 3 g Irish Moss - Last ten minutes of boil (omitted from calculations)

    Irish Moss

    A dried red-brown marine algae. Fining agent to remove large proteins. Negatively charged polymer attracts positively charged protein-tannin complexes (extracted from grain husks and hops) during the boil. This action is aided by the clumping of proteins in the boiling process. Irish moss settles to the bottom of the brew kettle with spent hops and hot break material at the end of the boil.
