  • .6 lbs Belgian Aromatic

    Belgian Aromatic

    Imparts a big malt aroma. Use in brown ales, Belgian dubbels and tripels.

    Sweet caramel flavor, deep golden to red color. For dark amber and brown ales.

  • White Labs WLP028 Edinburgh Scottish Ale

    Scotland is famous for its malty, strong ales. This yeast can reproduce complex, flavorful Scottish style ales. This yeast can be an everyday strain, similar to WLP001. Hop character is not muted with this strain, as it is with WLP002.

Notes

Steep the specialty grains at 152F for about 40 minutes in a gallon of water. Sparge, and add remaining water and one can of light syrup, bring to a boil & add first round of hops. At about 20 minutes out add remaining malt syrup (Munton's has a richer malty flavor), reboil. Follow the hops schedule and hit the wort with a whirlfloc tab at -15 minutes. If you like, throw an extra ounce of Willamette or Fuggles in at knock out to give this a stronger hops aroma. I'd stay away from Cascade additions late because the chocolate/coffee-like notes of the roasted barley don't balance well with the citrus of a Cascade addition. I chose Edinburgh yeast because it produces a nice balance of malt vs. hops, and results in a smooth mouth-finish.

Started this brownie today with Brent, John & Joey. The house smells great...Ahhhh...caramelly and earthy. Threw in an extra ounce of whole leaf Willamette in a nylon bag at knock out, & removed it when the wort hit 130F. Pitched the Edinburgh tube into 4.9 gallons at 70F with an OG of 1.054.
