A dried red-brown marine algae. Fining agent to remove large proteins. Negatively charged polymer attracts positively charged protein-tannin complexes (extracted from grain husks and hops) during the boil. This action is aided by the clumping of proteins in the boiling process. Irish moss settles to the bottom of the brew kettle with spent hops and hot break material at the end of the boil.

This beer finished at 5.4% ABV but you 'd never know it! It's tasty and smooth but not terribly strong. Initially I wasn't particularly excited with this recipe because of it's mild flavor and easy going style, but I'm quickly changing my tune. It's light and refreshing but will sneak up on you if you're not careful. Easy drinking and potent. An excellent choice for introducing family or friends to homebrew or as a refreshing beverage on a hot summer day.
