From BYO magazine recipe. Turns out a great brew. Recipe was slightly modified to allow for use of my inventory. One of my best brews. Will make this again for sure.

Ingredients (Extract5.25 gal)

  • .5 lbs English Brown Malt

    English Brown Malt

    Imparts a dry, biscuit flavor. Used in nut brown ales, porters and some Belgian ales.

  • .25 lbs American Chocolate Malt

    American Chocolate Malt

    Use in all types to adjust color and add nutty, toasted flavor. Chocolate flavor.

  • 1 lbs Crystal Malt 120°L

    Crystal Malt 120°L

    Pronounced caramel flavor and a red color. For stouts, porters and black beers.

  • .25 lbs Black Roasted Barley

    Black Roasted Barley

    Unmalted roasted grain, it is the backbone of many stouts. Imparts a sharp acrid flavor characteristic of dry stouts. Gives "dryness" to a stout or porter ,more so than regular Roasted Barley.

  • 1 lbs German Light Crystal

  • .5 lbs Weyermann Carafa® II; Weyermann

    Weyermann Carafa® II; Weyermann

    Carafa I, II and III also are available de-husked. Adds aroma, color and body.

  • 9.9 lbs Liquid Amber Extract

    Liquid Amber Extract

    Amber is used predominantly in the production of medium-colored beers such as pale ales, IPAs, and bitters.

  • 1 lbs Dry Dark Extract

    Dry Dark Extract

    Used predominantly in the production of dark beers such as milds, browns, porters, and stouts.

  • 3.25 oz Cluster - 7.2 AA% pellets; boiled 60 min

    Cluster

    Used for bittering and flavor qualities in light and dark American lagers. Aroma is very floral.

  • 1 oz Northern Brewer - 7.1 AA% pellets; boiled 2 min

    Northern Brewer

    Used for bittering with strong flavors and very fragrant in steam beers, dark English ales, and German lagers. Aroma is medium-strong with evergreen and mint overtones.

  • 1 oz Centennial - 9.7 AA% pellets; boiled 2 min

    Centennial

    Aromatic but acceptable for bittering. Medium aroma with floral and citrus tones. Good in medium to dark ales.

  • Wyeast 1056 American Ale™

    Wyeast 1056 American Ale™

    Used commercially for several classic American ales. This strain ferments dry, finishes soft, smooth and dean, and is very well balanced.

From BYO recipe. Crystal 40L is Carastan Malt Carafa II Dehusked Brewed 3/17/05 OG 1.085 Secondary 3/24/05 FG 1.022 Bottled 4/2/05 Turned out Great! One of my best ever. Will make again.
