Pale extract?

Whats the best substitute for pale extract, light or amber, and whats the difference?

Light extract is the best substitute for a pale malt mash. Amber extract is mostly pale malt, with enough caramel/crystal malt in the mix to give it the color and a little residual sweetness.

If you want an amber colored beer, I would still go with the light extract, and then steep your own desired amount of specialty grains to get the color you are looking for.

Light, or extra light

They also sell an extra light malt in both DME and liquid extract.
Since your screen name is wheat, I have to think you may be trying a wheat beer. The light or extra light would be good ones to highlight the wheat flavor. Don't worry too much about messing up a batch, I haven't found a batch messed up enough to throw out. You can always drink your mistakes.
Try all three and see which tastes better.
