Do I adjust my water profile to the amount of water in the mash, or the final amount of boiled wort?

In simplest terms, you can calculate salt additions for the entire volume of mash and sparge liquor. That is how it would work if you were trying to determine what beer you would make from your tap or well water.

You can make it more complicated, if you are primarily interested in using salts to adjust the pH of the mash, or if you are mostly trying to add 'flavor ions'.
