Problems with initial gravity
I brewed a sweet stout that ended up having an initial gravity of 1.081 and i was aiming for 1.055-1.060. I pitched the wyeast last night and it is going okay (not a mass action) but it is ferminting. I read I can add boiled and cooled water to get the I.G. down. Is this correct How much do I need to add will oxygen get in and mess up my beer etc. (5 gal batch, but really only have about 4 gal since some was left in the pot due to junk at the bottom).
Dilution
Dilution is best done at yeast pitch, but should be okay if you do it while the yeast is still active. Yes, boil and chill the water to fermentation temp.
