Thoughts on this IPA

Post by bwilliamson »

I recently made the beer with the ingredients below and at this point it's in the secondary and is ready to bottle. I am wondering what I could possibly do to reduce the bitterness a bit and add more aroma? I have not dry hopped yet.

70 minute boil
4 gallon boil, topped up to 5 gallons in primary.

1 lb of Dingemans CARA 20 Belgian Malt 24 lovibond (mashed at 152 F for 45 minutes then removed)
3 lbs Briess DME Sparkling Amber (full boil)
3 lbs Briess DME Golden Light (full boil)

Hops - all pellet:
1/2 oz US Goldings while boil was getting up to temp
1 oz Warrior @ 60 minutes
1 oz Simco @ 45 minutes
1 oz Centennial @ 30 minutes
1 oz Citra @ 15 minutes
1 oz Citra @ 5 minutes

Safale S04 yeast

OG was 1.048
FG is at 1.011

Thoughts on what I should do with this?
I have 2 ounces of Cascade and 3 ounces of US Fuggles left.

The bitterness will decrease a bit over time.

Dry hopping with the Cascades should improve the aroma.
