Yakima Magnum!

I've used Magnum many times for bittering, though in small amounts, it also makes a good finishing hop.
Magnum is a high alpha Hallertau derivative. Avg. alpha is around 13-15%. Like Hallertau, it has a rather spicy flavor that goes well in pilsners, & lagers. The last time I used it was in a Dusseldorf Alt, but its robust flavor does well in Steam Beers and Pale Ales too. I've had no problems with it, and am happy to recommend it highly.

My experience with Magnum is a very mellow acid - great bittering hop. Magnum has a very low cohumulone level, which allows you to use more of this variety while maintaining a very smooth bitter base. If you use a calculator, the IBU's may look to be off the chart. I'm told that is normal with Magnum and all should be well so don't be alarmed by a particularly high IBU that wrecks your compliance.
