Well out here in the lovely state of hawaii, it is nice and warm.....good for people, but bad for beer. The correct brewing temp is 65-70 f or so. Well room temp constantly is up around 80, and from what i understand can lead to an off tasting beer. To counter this problem, I have been fermenting in a water bath, rotating ice packs out twice a day . I have just bottled the beer, and am wondering if i still need to have the water bath? I have them in a plastic foot locker in a cardboard seperators.

Next question, I also have heard that beers such a tripel require a slightly higher fermenting temp 70-75f. Is this the case, because i have seen recipes that have a 60f ferment. If anyone can help me it would be greatly appreciated.
