Add the yeast

Add the yeast and see how it turns out. For centuries people didn't know yeast was the four ingredient in beer. Whatever yeast that was floating in the air fermented their beer, and they thought it was divine intervention or something. There are some bad wild yeasts out there that may ruin your beer...

Update

Don't know how many of you read of my fiasco with the "pantyhose hop bag".
Anyway, tried the resulting beer the last couple nights. All traces of the dye is gone, and no off flavors either. The yeast definitely did what it was supposed to do.
Now what to call my Pantyhose Pale Ale?

Definitely use the nutrient and Enigizer

You definitely need to use a nutrient and enigizer. I think the ratio is 3 tablespoons of honey, 1/2 tsp of nutrient and 1/2 tsp of enigizer to 16 oz. of water. make sure the honey has been placed into boiled water and disolved to "pastuerize".

Light, or extra light

They also sell an extra light malt in both DME and liquid extract. Since your screen name is wheat, I have to think you may be trying a wheat beer. The light or extra light would be good ones to highlight the wheat flavor. Don't worry too much about messing up a batch, I haven't found a batch messed...

axle?

I saw the design of your mill. One thing that caught my eye, was that you had to go buy something to use as an axle, and then bearings to let it ride on. Did you consider an axle and bearing off of a bike. The bearing and axle would be close to the right length and size you would need(I would think)...

Agree

With the limited info we have, it sounds like your beer will be fine. Since the yeast is still ontop, make sure you don't try to bottle it. The yeast still sounds like it is quite active. Also, you may be able to physically see the bubbles coming out of the wort, or half made beer. You may never obt...

Superior

Superior dry lager yeast
It is from Australia, and it is very clean. I think it comes in a 7 gram packet, so you may want to use 2 packets or use it in a starter. I have used one packet with good results and no contamination, but I am also extra careful and liberal with the one step sanitizer.

Normal

All yeasts are a little different. The stuff still floating on it is your yeast. It is probably still fermenting but at a slower rate than you expected based on the first days action. I wouldn't put it in a secondary just yet though since I don't know how you pitched the yeast, or what Temp the cons...

English Stout

Anyone ever use Williams brewing English Stout Extract. I recieved 6 lbs of it with my grab bag extract offer and wanted to know a good "sweat stout" recipe if you have tried it. Supposed to have been mashed from English two row and dark roasted malts. Been a while since I did a Stout, sin...

Vent the ceiling

If you do the louvered door approach, you may want to put a vent into the ceiling of the closet for the heat to go up(that is if the ceiling goes into your atic or gable) I have louvered doors on some of my closets, and the heat that gets in there wants to stay a bit. The vent in the ceiling will gi...

Ceramic shops

The same ceramic shops that sell you the mugs, can order you the other supplies. Or you may try Laguna Clay. They have distributors throughout the US. I'm sure you could find a site online too.

Sounds good in theory

Souns good if you can get enough cool air into the coils of the fridge to get rid of heat build up. Many people build fridges into their cabinet work. but there is always some room for air flow. Also, be careful about where you drill your holes for the lines. You may drill through a freon line and t...

Williams Brewing

Has anyone done business with Williams brewing? I have ordered stuff in the past and had good luck with them. Since you all have heard of the Brew shop waste land I am living in, I started to shop through the catalogs and online. I recently ordered a 22 lbs malt grab bag they offered with my other o...

Ceramic shops

You may want to check ceramic shops in your area. If you have someone whom like to do that type of artwork, have them finish them for you. The shop proprietor will finish them for you but may cost you. My wife does hand thrown pottery, so I can get them in any shape and color, as her artistic whim s...

How Clean is your Garage

I don't know about you, but my garage is for the car, the lawnmower, leaf blower, etc. I don't know if I would like a Lambic Lawnboy. I guess I'm spoiled, we are doing an addition to the house consisting of a Kitchen, Living room and dining room. The old kitchen will become our laundry room and my b...
