Bender... Jawbox and brewmeisterintng have good solid points to their replies. Northern Brewer makes some pretty awesome kits and they also publish their recipes on their site. I have 2 brew buddies that purchase their kits on a regular basis....and of course I have the chance to sample their finish...

i've been doing that exact technique to cool wort for a few years now but i use a sub-pump and a cooler of ice and a few inches of water. It works great and fast too.
Where in FL are you? I'm in the NSB Daytona area.

yes....the yeast will last longer than 2 weeks, and i don't remember ever stating that the yeast would perish after that time. I should have stated that for maximum viability, it has been said that you should try to use your harvested in 2 weeks, and if not, ensure that they are stored appropriately...
