From one newb to another
Get a 10 gallon kettle. I know there's a price difference, but after the 3rd boilover you'll wish you never bought the 7.5. Also, ending up with 5 gallons of wert left is nearly impossible with the 7.5. But if you do go that route (I did cause I'm poor), then here's my advice: Have another stand bes...

I know you said you left the idophor solution in the carboy until brewday... But did you let it fully evaporate before pumping in the wert? So my brew buddies ran accross these plans for a home made sculptute for all grain brewing using 3 full size kegs with the tops cut off.. Anyone ever herd of doing this? See any problems with the idea?

Wow this is slow..
Got up this morning and... YEAST! Well, at least I know it'll brew now. This has to be the slowest I've ever seen it though. Not the rapid growth rate I've seen in all my other brews. Maby shipping the yeast from cali to NC in this rancid heat damaged the yeast. One thing's for sure... it's sloooow...

Pretty much, I think the more malt you put in the beer the more carbs it will have.
You ever tried Michelobe Ultra? I don't know if I would want to spend hours of my day brewing that stuff. I can get water from the tap. :0/

Not Possible... Flare fittings maby?
Unfortunately, even if you take the fittings apart (extra hard on pin lock kegs), the opposing fittings won't fit it. There are threaded hose fittings (flare fittings), however, that can allow you to swap the hose fittings rather quickly. I bought mine from morebeer.com, though I'm sure you can find...

Rookie style, baby!
Shook that baby up, and threw 'er right in there! I take it I screwed that one up, hu? Also forgot to mention, the wert was closter to 78 degrees or so.. Tap water wasn't getting cold like the hose use to. Next time I plan on using a fountain pump and ice water.. Maby the heat also had something to ...

I live in NC.. Southeast, baby.. Home of the "heat index." What's that? That's when it's sooo humid, we have to have another temperature rating to account for it. It's too hot to brew over a gas burner in my appartment garage. I can't do it on the potch cause someone will see me (illegal)....

Actually, yes.. I did add the extract while it was boiling. Because it was dry extract, I thought it'd stir it up better. Obviously flawed logic.
