Thanks, slothrob. Good info on how the physical characteristics of the tablets changed. Although my Campden tablets are a few years old they haven't become enlarged or powdery, so I guess I'll use them until they're gone. I only have a few left anyway. Yeah, I'm still here. I visit the site at least...

In the pane on the left of the screen highlight My Ingredients. Next, go to the top line menu and hover over the printer icon, the one that's third from left. A message should pop saying "print folder contents". Click on that and your list should print.

What temperature is the beer? If the beer is cool carbonation will take longer. Raise the temp to the mid 70's, if it's not already.

Welcome, BigNath! Those fields (TN, SNR, Protein, etc) are for the analysis of a given grain. As an extract brewer I don't think they apply. You have to manually deduct used ingredients. You do this using the Shopping List. To open the shopping list go to the top line menu and click on Window. I voted for local shop because there wasn't a choice for other. I actually get most of my base grain from North Country Malt as part of a group buy. Hops, specialty grains, and yeast I get from my local shop, The Brew Hut.

I think you're doing enough. In fact, I'm not sure it's necessary to make another batch with the old Campden tablets. You've gotten the same result three times in a row, so I don't think a fourth batch would have a different result. Provided that the new salt solves the problem, I think you've found...
