Hi AZ Suupp
I think there are some yeasts that I must have to recreate some of my favorite beers. I can tell the difference if another yeast is used. So sometimes I just get the one I need and use a starter to get what I need. I agree that I shouldn't have to do this, and the vial should be enough for a 5 gallo...
Corni kegs
It only gets better from here with kegs. I actually lager my Octoberfest in a corni to clear it. The tall shape lets any finings you my use to have a good effect. There is a lid you can buy to force carbonate in the corni also.

Clearing the old home brew

Russian Imperial
Well, I just took the Russian out of the basement after 9 months and put it in the frige to carbonate for two more. Since I haven't brewed since this beer it am hoping nothing happened.
I wanted to know if this is long enough aging considering how heavey this beer is at 1.110 and 14%ABV.
