High Finishing Gravities
Please help me. I don't know what is wrong here, but I am in a brewing slump. My last three beers all finished way too high. The first was a Porter, and that one was my fault. The last two were a stout and a mild brown ale. For both of them, the OG were acceptable. The only thing I have done differe...

One Step Sanitizer
Hello Brewers! I've got a question about the cleaner I've been using for my homebrew gearstuffs. I've been using "One Step" no rinse cleaner for a long time now. It says that it "cleans with oxygen". It does not say on the packaging or at the company's website what the actual che...

Recipe advice for specialty grains
I am working on some new recipes and would like some advice from other brewers regarding the use of specialty grains, specifically Chocolate malt and Roasted Barley. I am formulating an English Brown Ale and wish to use a 1/4 lb. of the Roasted Barley and 1/4 lb of Chocolate in an extract 5 gal. bat...

1. Local print advertising 2.I agree with the thing about parking the other guy said. Location is secondary to parking. 3. I like to support my local homebrew shop. If they don't have it, they will get it for me. Having said that, they have a truly excellent selection of products at competitive pric...

Malt extracts...More info please!
I posted this topic here a few weeks ago, but did not get too much response from you guys. My local homebrew shop has an excellent selection of liquid malt extracts that they sell all for the same price. They sell Cooper's, Munton's, John Bull, Northwestern, Briess, Montmellick, and maybe a couple o...

This post gave me a great idea.
What about this? Fill a couple of small plastic bottles full of water, then freeze them. I'm not sure you could boil them unless they were glass, but I'm sure you could easily sanitize them before immersing them into the hot wort. I am an extract brewer with a small boiling kettle that usually boils...

High finished gravity
I recently brewed a Porter that is currently in the secondary. I racked from the primary before achieving final gravity and now it won't budge. It was projected to finish at 1.010ish but it is at 1.019. What should I do about this? Should I get some more yeast and throw it on? Or should I just bottl...

Malt Extract Choices....
My local homebrew shop carries a good selection of malt extracts. They have Munton's, Cooper's, John Bull, Montmellick, Briess, and Northwestern. For those of us who use liquid malt extracts, would any of you guys recommend a particular one, and why. I am interested to know which is the best quality...

Starting Secondary
I am an extract brewer. I brewed a Porter on Thursday that I want to bottle relatively quickly, but still want to do a brief secondary fermentation. So, my question is; Is it bad to rack from the primary to the secondary too quickly? I don't want to affect the FG.Thanks!

Use of adjuncts
I think a glossary or virtual library could be helpful to explain the character imparted by certain ingredients, especially adjuncts. I am developing new recipes all the time using your site, and I think it could be quite useful. For instance, what if I added oatmeal to a recipe? What results would ...

Thanks Mesa!
You are so helpful. I agree that when you are shooting for a very unique style, a liquid yeast strain is very desirable. But for standard ale types, it's nice to know there is an alternative. Thanks again!

Using dry yeast
I have been using White Labs pitchable yeast vials for my last few batches of beer and have had good results. Most of those batches were using "specialty" type ale yeasts like Scottish, or Hefeweizen. I am about to brew a Porter and was considering using a good quality dry ale yeast since ...

Vanilla Porter
I will be brewing a 5 gallon extract batch of porter soon and want to try a little experiment. I am going to seperate the beer into two secondary fermenters. I will put the first gallon into one carboy and the remainder in another. In the first carboy with one gallon of beer I would like to add a va...
