Secondary Fermentation
Just a little tip, adding fruit juice ( or any other sugar for that matter )to your secondary, I usually recommend using a blowoff tube instead of a standard airlock. Due to the amount of yeast cells that is in your beer after primary any addition of sugar will usually create a faster and more vigor...

Made a Mead once
After a pitful attempt of making a Honey Mead my only suggestion would be to use a strong yeast strain and possibly some Yeast Nutrient to get it started. Then again my Mead tasted like something you put in a gas tank even after a year. But it looked pretty.

Plastic vs Corny
I have used Corny Kegs for a couple of years now and really think they are worth the $$$. Personally I would worry about carbonating. At least with the Corny's its easier to keep your keg at a constant pressure and a more consistant result.

Hot Sparge Temp
A buddy of mine brewed one of these up. He used rice hulls, but also employed a hotter than average sparge water ( I believe in the 180's ). According to him it didn't stick. Beer tasted great, that I know first hand.

Copper vs Brass
Go with Copper. It is a very good conductor of heat and is very efficient in the cooling process. I have used one many times a I never had any odd flavors.

Gravity
I had a simular issue a few years ago. Turned out that I had a defective hydrometer from a cheap kit I had purchased. If you know another homebrewer borrow theirs and check your final gravity with both.
