I had a fermentation go out of temperature range and the result was a very unpleasant tangy beer. Now, mind you I was 5 degrees Centigrade out of the recommended temperature range, so that could have impacted greater on the resulting beer then what you are talking about, but still...ooh. Question on diacetyl

How do you determine exact diacetyl level in your beer in order to know when enough is enough? Guessing is fine for the moment, but I have an overwhelming need to know the science.

Someone will disagree, I am sure, but...

I have had very good turn around time using the dry Cooper's yeast. I know that many will tell me that I am crazy but I have made some excellent beer with this yeast. The beer is usually ready to carbonate within 12 days and has worked for me in bitters/porter/and in an alt beer recipe.

on the subject of the yeast

I like the menu idea for yeast selection and the proerties of the yeast but would still want to get a recommendation from the tools as to which yeast would be best for the style.

I think that if you are old enough to die for your country, you should also be old enough to have a brew so you can relax from your responsibility. Having said that though, I have always felt that the age for driving a vehicle should be raised to 21.
