BYO 150 Clone brews magazine

I know there aren't too many people that view this forum anymore, but I'm hoping someone who does has this issue. I had it, but I loaned it to a friend and never got it back. My brother recently got into homebrewing and was wanting to do a recipe I made when I was still doing extract and grains. I r...

I also keep a spray bottle of sanitizer for these situations. It's a good idea to buy another airlock too. Whenever I get a clogged one, I like to have a freshly sanitized one to replace the it with with asap. Then I can clean the old one properly without worrying about contamination.

There's not much difference between 2-row and pils. I've used both to brew my Belgian Wit, and I haven't noticed any significant differences.

I've never primed with honey, so I can't comment on that. The only thing is, it might be hard to figure out just how much honey to add to each bottle.

As far as adding it now...no problem. It will add more sugar for the yeast, and it will have a better honey flavor because you didn't boil it.

Here's a picture if it helps. It's a bad picture because of all the krausen that didn't fall in, but you can see the white stuff on the right side.

This concerns me. I had originally thought it was a bacteria strain that takes hold in lambics, but wasn't sure how a lambic style oktoberfest would taste, so I kegged it anyway. I'm thinking the culprit has to be my plastic buckets. This one hasn't been replaced in awhile. My sanitation is always v...

Mold or Infection?

So, my latest batch (an oktoberfest) was done fermenting a few weeks ago, but I decided to leave it in primary for a total of 26 days. I went to keg it today and when I pulled off the lid, I noticed there was a whiteish glass-like substance floating on top with the remnants of the krausen that hadn'...

Patience Patience Patience. Bottle carbonation can take up to 2 months of some beers. 12 days is way to early to be trying your beer (I know you're anxious). Even if it does carbonate that fast...it's best to leave it for at least 3 weeks because the taste will be much better. Try your bottles after...

I actually just got that issue of BYO a few days ago. It was a good issue for me since I'm getting started on yeast culturing. I also liked the article about leaving it on the yeast. Personally, I prefer to leave it for 3-4 weeks and then keg. I only use secondary if I'm adding some sort of adjunct ...

Re: Dry-hopping in the secondary

I have nothing to add about the dry hopping, but I wanted to mention that the secondary is really just to clear the beer (or for adding things like dry hops). Fermentation should be complete before you transfer the beer out of the primary, or you risk stressing the yeast and getting off flavors. Ac...

Just a tip. Depending on what hops I use, I sometimes only leave them in for 7-10 days. Any more than that, and you can sometimes have a very grass-like veggie taste. I would taste it every few days to decide when to take it out. Better safe than sorry.

You're yeast will do fine. I've had beers carbonate fine after 3 months in fermentors. Yes, the yeast will probably fall out of suspension to a point, but I bet that just moving your carboy to wherever you bottle is going to shake up enough yeast to get your bottles going. Without fining agents, I'v...

Your yeast will be fine. Dry hopping idealy should be done when primary fermentation is completely done. The gases created by fermentation will carry all those vital aromas right out of your beer.

Dry hopping in the keg is not an issue. I do that with some of my IPA's. Dry hopping can really be done at anytime throughout the fermenting process.
