cornelius fermentor conversion
Does anyone know if there is such a thing as an air lock that can replace a pressure relief valve on a cornelius keg so the keg can be used as a fermentor? If so where can I find one? Are there any reasons why a cornelius keg should not be used as a fermenting vessel?

caution against rain water
First, having a high bicarbonate means that the water is very hard. Boiling it will reduce the bicarbonate/hardness and lower the pH. You know its working when you see the Ca-MgCO3 precipitating on the side of the kettle. This in turn frees hydrogen ions and reduces the pH which is the main problem....

Ok, I tried a partial mash again last night and my mash efficiency is far from efficient. Can anyone recommend a good book that goes over mashing in detail? pH way off
I jsut happened to have access to the instruments necessary to measure the parameters of my tap water. Sure enough when I measured the pH it was 7.9. Haven't measured the hardness yet but I'll bet it is also too high. Then I measured the pH of a gallon of distilled water which is 6.3. Great tip! Goi...

protein rest?
I've been reading a lot about mash techniques and I'm not clear on the definition of a protien rest. Is this just removing the mash from heat after it reaches the desire temperature or maintaining the desired temperature for a specified period of time?

partial mash
I've been doing a partial mash 2-3 lbs of grains and 4-6 lbs of extract. Recently I have been increasing the amount of grains and experimenting with the mash process so your advise will help considerably. What is a good range of pH for the water?

I just moved to an area where the hardness of the water is significantly higher than at my previous place of brewing. In brewing my ale recipe that use to, on average, go from O.G. 1.056 to F.G.1.012 I can now only get down to 1.020 at best. Can the difference in water chemistry be effecting these r...
