Billy was right. What I find about all grain (I have been for over 3 years now) is the fermentability I achieve. I get way lower Final Gravities with all grain, plus the complexity that you can achieve by "blending" different malts is amazing. I never made beer this good before all grain. ...

James, What temp are your carboys at? You might want to try and warm them up a bit to say 72F-75F ? ? ? No more than 80F, that might jump start the yeast ... either way tough situation, I know what you mean about "Da-bomb" ... I had a few exposives in my past too ... the room stunk for wee...

Yup I agree
When I first started brewing I didn't have carboys either, and I used plastic buckets with lids / airlocks for 2 week secondary ... My advice is GO FOR IT ... until you can afford / acquire a carboy ... you'll be better off secondarying in plastic than not at all. I agree with James and Billy. Good ...

Cao, I am not sure what the taste is or if you are not rinsing enough, but I do know You should NOT use chlorine in Stainless Steel it will attack the metal ... I'll let others comment as well ... I use PBW (Powdered Brewer's Wash), I actaully make my own ... 2 parts TSP/90 and one part washing soda...

Sholbert I believe that it is calculated from the total batch size. 10 % of your bill will be the specialty that you are adding. So if your recipe calls for 10 % adjunct, and it uses 4 pounds pale malt, and 5 pounds of extract and 1 pound of adjunct, this one percent will be 10% of the total 10 poun...

Bill, What temp's are you fermenting at, both primary (how long) and secondary (also how long). I have been stumbling through the lagering process not very scientifically, primary starting at 70F for one day, putting it in a chest freezer at 55F for two days, and dropping it to 45-50F for 5 more day...

Careful with those panty hose
Yak and Brew Industry uses some pretty strong dyes for those hose, even the "nude" ones. I would not recommend using panty hose for any part of homebrewing. I always dry hop just throwing the hops in the bottom of the carboy and let it go. They WILL settle out, I promise. I know from exper...

I think the dry might intially be winning out but the liquid will catch up ... I have used whitelabs 8 months past expiration with good results, I always make a starter and don't brew until I have krausen in my starter ... good luck,

Sholbert, Billy knows what he is talking about. We need to know the recipe ingredients and if you used dry yeast or liquid, and whether or not you made a starter or not etc ... regardless as stated go ahead and bottle, and let us know how it turned out OK, Regardless, welcome to the BeerTools commun...
