Slo, I did see in Palmer's writings that the RA was supposed to be below 300, but not the HCO3. That's what confused me a little about his SMR Color/Style Guide for RA Mash pH chart. I'm just driving myself nuts with this !@#$. :x I'm just gonna say screw it and get my RA up as high as I can without the HCO3 getting over 300 and just go with it. I was brewing an Oatmeal Stout tomorrow. It has an SMR of about 35. So if using the RA method, it's supposed to be about 270. But I can't get it that high if I'm not supposed to go over 300 (HCO3). Slo, I've been tinkering with Palmer's Suggested Beer SRM Color/Style Guide for Residual Alkalinity Mash pH chart. So what your saying is, that the bottom dump valve is mainly used for trub and yeast removal and the upper valve is used for siphoning off the beer. How to use a conical fermenter?
Since I like to harvest my yeast, I'm thinking about building my own conical fermenter. Not ever used one before, so I'm not sure how it works.
Can someone explain this to me? What is the purpose of the 2 valve ports and is this really necessary? Why couldn't you just use a bottom dump valve?

Grains
Try using a bit of chocolate malt and/or a healthy does of Munich malt. These both add a "nutty" type of quality to the beer.
