Slo, I did see in Palmer's writings that the RA was supposed to be below 300, but not the HCO3. That's what confused me a little about his SMR Color/Style Guide for RA Mash pH chart. I'm just driving myself nuts with this !@#$. :x I'm just gonna say screw it and get my RA up as high as I can without the HCO3 getting over 300 and just go with it. I've done a bigillion different combination and I can't get it there. I'll just have to see what happens. I think I'll still be alright...

I was brewing an Oatmeal Stout tomorrow. It has an SMR of about 35. So if using the RA method, it's supposed to be about 270. But I can't get it that high if I'm not supposed to go over 300 (HCO3). Try mashing in at about .5 qt/lb. and see where that gets you. I think you've just got it set too high. Protein rests are more effective if your mash is thicker.
I also batch sparge, but I usually just do a single sparge run if my mash tun will allow it.

Slo, I've been tinkering with Palmer's Suggested Beer SRM Color/Style Guide for Residual Alkalinity Mash pH chart. How to use a conical fermenter?

Since I like to harvest my yeast, I'm thinking about building my own conical fermenter. Not ever used one before, so I'm not sure how it works.
Can someone explain this to me? What is the purpose of the 2 valve ports and is this really necessary? Why couldn't you just use a bottom dump valve? :?

I saw a few hop spurs on mine today. They're maybe an 1/8". Pretty small still.
Next year will be much better. I can't wait to see how well they do.

Try using a bit of chocolate malt and/or a healthy does of Munich malt. These both add a "nutty" type of quality to the beer.
