I had the same issue with a batch a while back. What I found out was I did not let enough yeast into the batch before bottling. I tried to keep as much sediment out of the batch as possible. That was my undoing. It took the lot about a month to carbonate correctly. Then all was good.

There's an old brewer's belief that a thinner mash might increase tannin extraction How it was explained to me about Tannin was that it was only released (from the husk of the grain) if your mash temp was too high. This is why we keep the keep the mash temp between 150-152 degrees. To make it short...

looks like you are doing some serious brewing. How many batches do you do a month? I can only do two because of the costs / time involved.

I also purchased one of the better bottles too. They are relatively the same price, within a few bucks nothing major. It seems to be doing fine. But for the most part of my brewing I use the buckets for fermentation.

Well it looks like you will have no other choice. For your next batch get a regulator and o2 tank if you wish to keg. If not you will have to bottle again.

You have a couple of options that I can see. 1) Get a Co2 bottle with a regulator and pressurize the keg and follow your letting and conditioning as usual. or 2) Considering you have enough good yeast left from the first go round. add another cup of priming sugar and bottle. bourbon taste

you are right it does seem like a lot but, I like the taste of bourbon. I tried it with just a 1/2 tsp first and it seemed kind of mild with very little of the flavor I was looking for. It does simmer down the strong flavor bourbon has as the beer conditions with some aroma.
