2nd Gen Yeast

All, Liquid yeast is getting to be on the pricey side at $7 for WLP001 so I have taken the traub from the secondary and pitched it directly into my new batch of Fat Tire Ale. Both recipes call for the same yeast so I figured that I can cut the cost in half if I plan my second batch around the bottli...

Thanks Guys

I have heard of using a bag to keep the hops together but I was betting that after they swelled you would play heck getting them out of the carboy. This is only my second attempt at dry hopping. My first attempt was in the primary. It seemed to go just fine and left most of the hops behind when I tr...

Dry Hopping

I have just dry hopped in the secondary. 1/2oz of Cascade pellets. I just poured the pellets in the bottom of the carboy before I transfered the beer. My question is will the hops ever settle down to the bottom? They seem to be hanging suspended. It's only been 4 days and I am going to leave it for ...

Rely on the gravity reading

If your gravity hasn't changed in three days your yeast has fermented all it is going to. You may have a bunch of non-fermentables which would cause a higher reading.
If you are still concerned, prime on the low side with maybe 1/2 cup corn sugar.

Alcohol taste

You didn't list the other ingredients to your kit. If I were a betting man, sugar was in there somewhere. Yes, higher fermentation temp can cause the off taste but so can high sugar usage. (corn sugar not cane sugar should be used if any). I would use liquid or dry malt for my additional sugars. The...

Expert Brewers

Those that claim to be experts... usually are not. Even the great Charlie Papazian whom I have met and respect doesn't know everything. I personally believe that brewing is an art. Some hold their brushes differnt than others but still produce great masterpieces. Now some of my "Paintings"...

fermentation

The hard and fast rule is to rely on the gravity reading. If you take a reading two days in a row and they are the same... near the FG, it's done. I have made the mistake of only taking one FG just to find out that the beer wasn't done fermenting yet. Talk about over carbonation.
