Dunkleweizen yeast

I recently brewed a nice Dunkelweizen. I used the White Labs Hefeweizen liquid yeast. The beer is still young but has a slightly yeasty character to it that is typical of a Hefeweizen. Two questions. As the beer matures will the yeasty character mellow? If I were to brew this recipe again, can someo...

Priming sugars

I am an extract brewer who commonly uses good old corn sugar for priming the beer for bottling. I am interested to get opinions on using other things such as molasses, brown sugar, etc. I am working on a recipe for a porter right now, and wanted to try something a little different. also, I was think...

Cork lined bottle caps

I just bought some vintage cork lined bottle caps in various colors so I can help differentiate my bottled brews. Are these caps good? Are they better than regular plastic lined caps? I bought them pretty cheap, so it is OK if you tell me to not use them. What do you think?

could be the caps?

This might be the last possible reason, but, sometimes when you bottle, if the caps are not totally snug, it seems like the seal isn't good enough to contain the pressure. I have had this problem before too.

Primary Fermentation

I recently brewed a beer from a recipe which instructed for a two week primary fermentation. I have read that leaving your beer on the trub sediment in the primary fermenter for too log can result in off flavors in the finished beer. What do people here reccommend? Also, the same recipe calls for a ...

What form of hops do you like?

I am interested to know which form of hops the brewers here prefer to use. Which is best/ Pellets, plugs, leaves, or whole? And also, I use nylon bags during the boil for my hops. Is it better to add the hops directly to the boil, then try to strain them out of the wort later, or does it even matter...

Tap - A - Draft

I am moderately interseted in the Tap-A-Draft home mini kegging system. But, I am curious to find out what you all think of bottling into plastic vessels (3 liter PET bottles). It seems that you would bottle the beer from your secondary right into plastic. Has anyone used this? It seems intriguing f...

Strong Scotch Ale

I bottled my first batch of Strong Scotch Ale this weekend. The alcohol content is about 6.5%. How long should it be bottle conditioned for best results. I tasted a pint the day of bottling. Nice flavor, but a bit of a sharp alcohol bite to it. I am storing tthe bottles in the basement at approx. 64...
