I have a recommendation

Jason, Perhaps you should devise a method where all brewers submit a recipe on a given form. The form should contain certain criteria, Original gravity, final gravity, type of beer, whether it is extract / partial mash / all grain. Also it should contain brewing steps. Type of grain / extract used, ...

Acid Rest

John, From what I have read, acid rest serves two purposes, one is to rehydrate the grist, and the second can be and should be when you want to lower the pH of your water when your water is high in alkalinity. Utilizing an acid rest can lower the pH of your liquor up to .8 IE: 6.5 normal pH, and aft...

My recommendation

OK, this is not totally free, but cheap enough ... Read Charlie Papazian's "New Joy of Homebrewing" advanced all grain brewing section. This will give you all of the information you need to brew all grain, I read it three times before I even considered making my first all grain batch. Secondly there...

Every response is right on

The first thing I thought of was "this must be an extract batch" I have had the same problem, the best thing you can do for your beer, is make a good fresh starter 1-2 days before you pitch and aerate as much as possible right up until you pitch, after that let the yeast do the work. I'd be curious ...

What is the recipe

Radiator, What are you brewing, I don't like to experiment with "odd" priming ingredients, too much chance for error, have you ever used Maple syrup or honey for priming? I prefer the consistancy of corn sugar. If you use corn sugar a rate of 1/3 cups + 2 tablespoons should be perfect for 2.5 gallon...

I think you may be OK

Caosesvida I think you may be OK, The secondary has less damaging effects on the final results, it is when you leave the ale on the Lees (yeast / Trub bed) that you might have a problem with. I have left strong ales on the lees for as much as two to three weeks (due to events beyond my control) and ...

Yup sounds good

Thanks Billy,

That's the information I was looking for, sounds like a breeze, I am going to rack my Dortmunder Export off this weekend, so I'll give it a go.

Hang in there,

Paul.

Is anyone successfully lagering in a keg

Hi gang,

I am running out of 5 gallon carboys to lager in and have 4 empty corny kegs, is it OK to lager in a keg ? I don't see why not, just want your opinion (which I know y'all are dying to give me LOL ...)

Boy can I relate

Willy, I used a Corona for 3 years and got a JSP Malt mill for Christmas (I love my wife :-) anyway I brewed for the first time today since motorizing my malt mill and I was able to grind all my grain (12.5 pounds for the "Pete's wicked ale clone, and 11 pounds for the Dortmunder Export) in less tha...

Willy. If you are looking for a good all around brew, try my "Harp Lager Clone" ... I have given this recipe to a few local brewers, and it has become their "House Brew", as it is mine ... you will love it, just search the recipe data base for "Azorean Brewer's Harp Clone" ... It is very easy and pr...

Patience

Baz,

When I was using dry yeast I found it took at least 24 hours before fermentation would start, just wait it out OK?

Sounds OK ...

Stein, Do you have a white creamy head on your starter, this is Krausen, if yes then everything is good to go. If you are getting air lock activity then I suspect you have krausen (pronounced Kroy-zen) As for the method I use, I put two cups water and 1/2 cup of DME into my sanitized pyrex erlenmyer...
