Does Wit beer count?

No hops, what about it?
I have only read about it, but it follows that they stopped making it as soon as hops were availible so it might not be too good.

I end up at .018 to .020

I'm with Fitz on this(nice recipe).

I always end up high on Fest beers using lager yeasts, it just takes longer for me to get there.
I bet this will be a good malty beer!

Crystal malts

I was always under the impression that Crystal malts can steeped and need not be converted due to the fact that they are converted during kilning and "Crystalized". The water needs to be warm enough to rinse the sugar out of the grain. True?

DME

I cask condition using DME. Gooood stuff!
1cup = low carbonation 1.5 vol about
1.25 cup = 2.0
1.5 cup= 3.0

Nitrogen advise

I want to carbonate my Imperial with c02 and push it with nitrogen. I know that we should use 30% n2 and 70% co2 mix, but I only have seperate bottles of both. I vote for the bleach treatment.
Clean carboy and.....

1/4 cup of bleach in five gallons of cool water for 20 min.

I will put my personal stamp on this, send me the culture if it does not die and we'll make a couple bucks off it!

Metal float

I have seen a float with a rod through it clipped to the side of the grant and when the float rises it pushes a clip on the rod adjusted to the hieght you want and makes the rod push a lever switch like the type used in vending machines. The float was stainless and came from a condensate heater pan....

That system works.

You are much more responsible than I, the turkey fryer is at least two feet away from the stand. Unfortunatly, my burner is part of the stand, soooo I used metal angle iron so the fire marshall would relax.

Funny you should say.

I have been in the basement making a three tier system to make my life(and Back) easier. I am sure the same beer that came out of my plastic bucket, will come from the glass carboy, will come from the stainless coni. For me, it's not about gizzmos, but about the ability to concern myself with recipe...
