Just Started brewing myself recently and had a similar problem. Listed as "Excessive carbonation" under "General" topics. Got a few replies and seemed to provide some information. Maybe they could help you out as well.

Don't know cause I kind of started drinking right after bottling. Excuse was wanted to see how beer changed as aged. But makes sense about making sure honey is mixed well.

Not as scientific a response as other, but from my experience drinking mass produced ice beers, for some reason seemed more likely to get a "beer headache". Didn't always notice as taste difference. i.e. Butt ice pretty much taste as bad as buttwiper. Although scientifically unsure how to ...

Space needed for 5 gal. carboy

2' H x 10 1/4" W x 10 1/4" L. Carboy is 21" but adds 3 for airlock. Hopes it comes together easy for ya.

I did make a yeast starter on the second batch which did seem to help fermentation, but I will get a wine thief and try another week in secondary next time. Thanx for the info.

# 1 would make more sense especially on 1st batch. Did boil honey, but just for a minute. I'm guessing to get rid of any bacteria. Did take reading with hydrometer, but can't really figure out safe way get beer out of carboy to take daily readings, so I do gravities before yeast and when bottling. I...

Working on drinking my second batch of homebrew. Both were very good except on first batch was fine until about 3 1/2 weeks after bottling, when I would open a bottle at least half would foam over. brewing for first time and also dry hopped in secondary. I also had a lot of bubbling, but the first night a head and sediment reformed and actually had beeer in airlock. not bubbling so much now, but either two are right or wrong. any tips are helpful. thanx.
