Most of your fermentation will take place in your 1 week primary. The amount of honey that is in this recipe won't require the long times to ferment like you'd expect a mead to ferment. As long as you treat your fermentation well, that time frame should be perfectly fine.

You could go ahead and make your starter early, then if all goes well, increase the starter size to 5 liters. to increase your cell count.

That yeast definitely works better if you warm the temperature up. Those temps are very low for that yeast.
