Priming Sugar staring fermentation again

I just added priming sugar to bottle a saison, and as soon as I did, it began fermenting again. FG was 1011. Should I wait another few days and try again, or try to bottle now? Will waiting affect the beer at all?

Beer Darker than expected

I just brewed a gallon batch with 8 lbs 2-row, 1 lb belgian aromatic, 1lb belgian biscuit and 4 oz. chocolate malt. Although I expected around 17 SRM, this came out dark as a porter. OG=1062. Mashed 120 for 30 min, then raised to 150 gradually for 30 min. Normal sparge. Why would this turn out so da...
