You don't need the hops to be "off the charts" to make a less malty IPA. Change your malt bill a bit. Keep caramel malts to a minimum, possibly change your base malt out for some pilsner malt. Experiment a bit. Hops aren't always the answer :)

i'll definitely try downloading that spreadsheet so see what i can figure out. i had thought about running through the mill twice as well. i think i'll leave everything the same and try that out to see how it helps.

i do have a park with pits very nearby that I could try. Right now, rauch malt is what i'm going to be doing, but we'll see. I might try to smoke my own at some point with hickory
