I added a long hose to the exit end of my immersion wort chiller. I put my brew pots in a "muck bucket" and then put the exit hose in the muck bucket so the wort gets chilled with the immersion chiller and the brew pot gets chilled from the outside too. I don't pay for water but it only ta...

Late to the party as usual but the coffee stouts that I've made, I've split the batch into 2 different carboys and have added 1/4 of fresh whole beans to only 1 of the carboys, then mix the 2 carboys before kegging the 1/4 barrel batch after the beans have been in the brew for about 2 weeks. I did t...

I'd never do a 15 minute full volume boil but little additions here and there seem to work. I was curious if anyone had an issue with the addition or the time that could potentially wind up doing something to the taste of the beer. No complaints so far. Plus the 12 gallon pot full of wort is really ...

I usually start with 6.5-7 gallons of first runnings in the 8 gallon pot and about 10 gallons of second running in the 12 gallon pot. I usually try to ferment about 17 gallons for dry hop loss or transfer spillage, yeast volume loss etc. I acheive great hot break. My thinking was that instead of add...

Adding More Wort To The Boil

I have a habit of watching my all grain wort evaporate during my 90 minute vigorous boil, reducing the volume of soon to be precious beer and getting sad. I tend to over rinse and have an additional 3 gallons of wort that I add back to the boil pots (a 12 gallon pot and a 8 gallon pot) during the bo...

Who has 4 or 5 days to wait? I used to rack into 1/4 barrels and cranked the CO2 to 30psi for 1-1/2 days and you're good to go. By the time the beer gets cold, you're ready to drink. If you throw a little sugar in your keg at rack off and let it sit for a while at fermenting temp you won't need long...

If you haven't shaken either a primary bucket or a carboy, there is a slight delayed response and then a large release of whatever the the gas is in the yeast cake is, through the air lock, quite violent at times. Its kind of like when you rack off from the primary yeast cake then the bubbles start ...

Shaking the Primary

Ok, more dumb questions. Any reason that should I shake up my primary fermenter after a week or so or more? I read some blog before that said it will do something but all I can imagine that shaking the primary does is release Co2, big deal. Any thoughts? I all grain if that makes a difference.

Yes, so far the floaters have appeared on the way to the boil and very heavily after the foam dies down. I like an very vigoruous boil and once formed they seem to remain consistent, neither growing or diminishing unless I fishnet them out. Will additional recirculation of the wort eliminate or redu...

I make an all grain wheat that's to die for but i'm always worried about how long it sits on the yeast. Can it go longer than 4 weeks or is that really the max before the taste is affected?

I usually have a slight boil over on the first run kettle with a lot of blowing on the foam to calm it down. I haven't changed a lot from batch to batch so I was a little worried. I haven't tasted the first floater fest batch yet so it will be interesting to see what if anything happened to the tast...

So here comes the not so smart part, what's a good hot break? After I recirc, the wort hits the cold pot and after a gallon or so of wort hits the kettle I fire it up to get a jump on the boil. I'm heating as the wort is flowing into the pot. Good or not so good? As my user name indicates, I have a ...

Wheat Beer Brew Kettle "Floaters"

Loaned out my Palmer book so I thought I'd post a question. I all grain brew a nice wheat with 50/50 2 row brewers and white wheat malt using a mash tun cooler and manifold in a single at 152F. I control the wort out flow and usually recirc at least a gallon of wort and the wort is fairly clear when...
