Relax a little James - the klutziness doesn't hit me nearly as much when I'm not dealiing with power tools. Cooking I'm usually fine with. It's just using tools I'm not all that comfortable with that gets me - and I'm very comfortable with brewing/cooking. Just 'cause your comfortable building thing...

Too much extract?
I used to brew liquors - and I picked up this tidbit of info... Most fruit flavors will "dim" as you age the liquor(fruit sugars oxidizing and/or fermenting). 1 year seems to be the falloff point, especially for berries. So if it still tastes too strong - stick it in the back of the closet...

Ale Pail Problems
Got one originally. 1st batch of beer it did this and we didn't catch it. The only thing I'll use an ALE PAIL for now is mixing my wort and priming sugar before bottling (also allows me to get rid of most of the trub and leftover hops before bottling).
