I recently brewed a wit with 1lb. oats and flaked wheat & wheat malt and my 1st. runoff had this grey sludge on top of it.I just skimmed it off and kept lautering although I did add 1/2 bag of rice hulls just before my sparge.Does your sludge float on the wort before runoff?I didn't notice it on...

You can try to warm it up to about 75F, and swirl it to rouse the yeast.I had one do that and all it took was moving it from my garage fridge to my house.Just the movement started it up.

fermentation woes
Could just be dissolved c02 from fermentation.I've bottled completely fermented beer that was slightly carbonated straight from the fermenter.You can't do anything if it is infected now so I would wait until bottling/kegging day(when the gravity stabilized) and taste it.If it don't taste crappy you ...

Wheat beers are traditionally brewed cooler than a lot of homebrewers tend to ferment. Close to 60-62°F works well for me. You may find this reduces the frequency of gushing fermentations and improves the flavor. Is that 60F room temp. or the temp you get the wort down to?Say 52F in a temp controll...

I cool wort by putting my brew kettle in a rubbermaid tub and dumping ice and water around it followed by gentle stirring of the wort.Every so often I will pick up and down on the kettle to circulate the water in the tub.I can usually cool a 6gal batch in this manner in 30mins or less with only 1 wa...
