Enzyme conversion usually takes place in the first twenty minutes if your strike temps are right. Overnight slow cooling is canceling out any benefit from late additions of aroma and tasting hops as these would only add bitterness. You would need to dry hop to get any benefit of aroma and taste of the finishing hops you were using.

I believe commercial breweries pasteurize their beer to maintain a set taste standard so it won't be influenced by any inadvertent outside parameters. I have been using a heavy gauge 30L aluminium pot for boiling wort now for around 10 years and it has become badly pitted inside. I bought a rubbermaid cooler and have done around 10 brews with it. Unfortunately the inner lining is cracking around the tap and I need to address this problem immediatly before any further damage. It appears this is the weakest point of the cooler.
