Light Lime Lager - Probably old news by now....

I never did the lemon wheat ale I intended to for last summer... But, for this summer I tried my hand at a light lime lager (seems to be all the rage with my yuppy freinds). I cut back the hops by about 1/2 eliminating the aroma step all together to let the lime flavor dominate. I added the zest and...

I can hardly beleive it myself!

The bad (and I do mean bad) taste went away. I bled off the pressure and I turned the psi down to a trickle (2 or 3lb) for a few days. I slowly warmed the tank just a few degrees to encourage it to bail a little more gas. I was really carefull not to shake it out but just to let the gas settle out o...

sour porter

About 2 weeks ago I tanked up a 6 gal batch of my own all-grain chocolate porter. I over carbonated the crap out of it (impatient prick) at 25psi at 5C which I know was a mistake. The taste started out smooth and roasty - mostly dry but with a hint of crystal maltiness (think rolo machiatto) with a ...

Cranberry Wheat Recipe ? ?

Does anyone out there know what the best procedure would be to make a cranberry wheat beer? I have developed an AG honey wheat recipe which uses about 2/3 pale and 1/3 wheat malt that always seems to get rave reviews. I plan to take a similar recipe, tone down the hops and flavor (and color) it with...

Kolsch Questions

I plan to whip up an all-grain Kolsch for summer. Would 2r pale be an acceptable substitute for the pilsner malt? I have plenty of canadian as well as some maris. (suprisingly different) Also, as I understand it, even though WYeast Kolsch 2565 is technically an ale yeast, it likes a slower, cooler f...

Rickard's Red Clone ? ?

Has anybody out there found a good AG clone recipe for Rickard's Red?
I am a sucker for true Irish red (mmmm) but I would like to take a whack at a more commercial style rendition.

a bunch of odd wheat conversion questions for vodka mash

Mashing malted grains is easy - even wheat if done correctly ... BUT ... I am hoping to find some advice on cereal mashing raw wheat (if it's even necessary). There is a ton of info on cereal mashing corn, rice, etc. is it the same for wheat? To avoid the whole cereal mashing thing I have heard that...

Thanks for the tip!
I collect my runnings directly to my boiler - would I have to remove the hops before the boil when using this method?

Hop varieties question ? ?

I am looking for a clean bittering hop that doesn't contribute much flavor.
I have used cascade for bitteing but I am not a fan of its strong grapefruity, clovey taste - even when added very early.
Any recommendations?

Lemon Zest ? ?

For my next batch I plan to use my favorite honey wheat ale recipe but to mix things up I would like to tone down the hops a bit and use lemon juice and/or zest to add some flavor and bitterness. Should I add the zest to the mash or the boil? Would the flavor be too prominent if i added a pinch to t...

Mash Hopping ? ?

Has anyone out there tried mash hopping?
I have heard that it can have better resaults than boil hopping but if that's the case why don't we all do it?
How would I determine how much hops to use to get the right amount of flavor and bitterness?

Vodka Mash?

I have AG brewed several successful batches of wheat beers using a combination of malted wheat and barley.
How could I successfully mash using only unmalted wheat such as is used for vodka?
What mash temperatures would I have to use to get proper conversion?
Would I have to use special yeast?
